Rolled Umeboshi Sardines



Rolled Umeboshi Sardines 





A very unusual way of cooking sardines 
For this recipe you will need sour plums (umeboshis) and shiso leaves ...
A combination of flavours you will love 




  • 8/9 sardines
  • 1tsp salt
  • 4 ume boshi (sour plums )
  • 1 table spoon sake (rice wine )
  • 1 table spoon of sesame seeds
  • 10/15 shiso leaves

1. Carefully fillet the sardines , taking care to keep the the tail , sprinkle with salt both sides
2. Remove the stones from the sour plums and mash with a fork in a bowl with the sake and toasted sesame seeds , mix until a smooth paste

3. Wipe the sardines with kitchen paper , spread some sour plum paste thinly onto the fillets ,and press shiso leaves on top














4. Roll the sardines and pierce with a wooden tooth pick to secure






5. Preheat the grill on high , put the sadines on silver foil on a baking tray , taking care to space them enough so as not to stick together , grill for 4 to 5 min on each side, until golden brown


6. Serve with japans steeamed rice and an asian salad ( here carrots , bean sprouts tomatoes and thinly cut shiso leaves in a sesame oil, sweet rice vinegar and fresh ginger dressing 



There are many kind of "umeboshis" varying in quality and prices
Some are sweeter or more sour than others
the very pink ones tend to be very sour , whilst the brown ones (like here ) tend to be sweeter

they can be ordered on Internet or bought in Japanese food stores
