an easy recipe for a light snack ... good eaten warm with a salad , or again cold
Ingredients
- 1 tin of tuna
- 1 roll of puff pastry
- Some mustard
- Some cheese (cheddar )
- 1 egg white
- 1 egg yolk
- some mushroom
- Some soya sauce
- Some spinach (optional )
- Some pine kernels
- Some fresh coriander (optional)
- Salt
- Pepper
Put some diced mushroom in a frying pan with a sprinkle of olive oil , sweat on medium fire , when getting brown add a sprinkle of soya sauce and cook a few minutes stirring ...leave to cool and squeeze any liquid out of the cooked mushrooms
I had blanched some fresh spinach , and strained it well (using a bamboo matt ) so that there is no water left ... i used only a bit of it , keeping the rest for another recipe which i will put here soon
Drain the tuna and mix in a bowl with the grated cheese , a good table spoon of mustard , some of the blanched spinach , the pine kernels , the egg white , the cooled and drained mushroom , salt and pepper ..mix well ..it should hold well ..if it is not , then add a few bread crumbs
Spread the pastry out ( keep the oven paper on which it is rolled) and put your tuna mixture on the centre in a rectangular shape
Cut some stripes on both sides of the tuna mixture
Arrange all the stripes in a criss-cross pattern over the mixture ( sorry i will put the pictures some other time , I forgot :) )
When all the mixture is covered by the pastry , spread the egg yolk over the pastry with a brush
Put in an oven 180degrees for 45 min
serve with a salad
